OnePlus Open | GCam versus Stock
I decided to try out GCam and it seems to be better in certain scenarios, specifically low light.
The stock camera app is better with dynamic range in bright scenes.

Iirc the oneplus cam is better due to proprietary software that is only available on the stock oneplus rom. However, this might only apply to the OP9P with the special German camera.
Yeah I have noticed that HDR is amazing on the stock camera.
