What build are you using? I think i just lobbed rocks at him and he died quickly with my mage build. Greatblade phalanx works pretty good against him too.
Kind of a strength/bleed build. I was mostly just leveling strength/endurance/vigor. Then when I got the bloodhound fang I maxed it out and have been labeling up dexterity (& occasionally arcane).
Yup. My bad. I was levelling up arcane as I was considering a swap to a bleed build with dual katanas, but after trying it I realised I preferred two-handing the fang.
He has a hard getting around the rocks near the edge of the arena. I had luck using it to my advantage

The arcane won't increase your bleed, it only increases bleed if the weapon scales with arcane. Bloodhound fang doesn't scale with arcane.
You should take the arcane and put it into dex. Keep enough so you can use bloodflame blade since you can use it on bhf.

I did. Used the edge trick. Might try that on the next playthrough.
If you have the stats to use it, try the Hand of Malenia katana! Using waterfowl essentially just stunlocks her and makes her considerably easier.
