Air-fried butter beans are basically the same as chicken breast. Brush em with oil, salt heavily, delicious.
I haven't tried it yet, but evidently there's DIY versions of the Just Egg replacement (i.e. mung bean)

Air fried lion’s mane mushroom makes spectacular “chicken” tenders.
Too bad both beans and mushrooms cause a lot of people stomach upset while chicken doesn't.
